Sorghum, millets (many different grains), oats in winter, and number of subtropical bunch grasses native and non-native. Lots of these are perennial or long-lived annuals in your climate and for sure will self-seed.

Years ago I once grew some indian corn just a few and the garden birds liked it.

I suggest mulberry... the birds love the berries, plus... there will be plenty of caterpillars for them.

For the butterflies... I suggest paw paw... there's a number of very cool types that grow in florida and nowhere else...

Also... try passion flower (passiflora) for the frits n long wings.

Might be too late this year, but papaver somniferum is always a big hit with the goldfinches... as self sowing annuals... they don't require any effort once established.

I take a lot of hummingbird pics out in my garden... and the plants that attract them would make too long of a list to post here...

Maybe search hummingbird photos... and plant the flowers that they're photographed with...

Congrats on the wildlife garden... the less turf anybody has... and the more wildlife friendly gardens... the better off we all are!

Sweet cherries are called Prunus avium for a reason. If you want to attract plenty of birds in the summer. In fact many cherry growers have a problem getting their cherries before the birds get them.

This is a great topic and working natural food sources in for the winged community is a growing niche for the home landscape. Providing some cover, a conifer, and amelanchier, viburnums or low bush blueberries offer shelter & berries; as well as fennel, dill, allium, agastache and lantana will draw some additional pollinators!
